Emily Deschanel and John Pierre grace the HHR podcast and talk about many intriguing things, from how she went vegan, to how they met, and what is like in Hollywood after having a baby. Emily played the role of Dr. Temperance Brennan with David Boreanaz as FBI agent Seeley Booth on the Fox crime procedural comedy-drama Bones. For her performance, she received a 2006 Satellite Award nomination and a 2007 Teen Choice Award nomination. She has many other accolades and roles over a 25 year career to her credit as well.

Matthew Wichrowski: The Healing Power fo Plants and Nature

Nature has a way of healing the soul, providing clarity and bringing peace to a troubled mind. Did you know there is a clinical specialty that uses plants and nature to heal? It is called horticultural therapy and it is absolutely incredible.
In this interview I interview an expert in the field, Matthew J. Wichrowski, MSW HTR, Clinical Assistant Professor in the Department of Rehabilitation Medicine and Senior Horticultural Therapist at Rusk Rehabilitation at NYU Langone Health. He is also Editor-in-Chief of the American Horticultural Therapy Association’s Journal of Therapeutic Horticulture.
I first learned about horticultural therapy and Matthew when I read the book, How to Make a Plant Love You, by Summer Rayne Oakes. (See my interview with her here. https://youtu.be/KFPgNrhhUoY ) I was amazed to learn how plants were helping people with debilitating depression and anxiety but it could also be used to help with stroke victims and much more.

Gene Baur: The Conscience of the Food Movement

Gene Baur has been hailed as “the conscience of the food movement” by Time magazine. For more than 25 years he has traveled extensively around the country, campaigning to raise awareness about the abuses of industrialized factory farming and our current food system.
A pioneer in the field of undercover investigations, Gene has visited hundreds of farms, stockyards, and slaughterhouses documenting their deplorable conditions. His pictures and videos exposing factory farming cruelties have aired nationally and internationally, educating millions about the plight of modern farm animals.
Gene has also testified in courts and before local, state, and federal legislative bodies, advocating for better conditions for farm animals. His most important achievements include winning the first-ever cruelty conviction at a U.S. stockyard and introducing the first U.S. laws to prohibit cruel farming confinement methods in Florida, Arizona, and California. His efforts have been covered by top news organizations, including The New York Times, Los Angeles Times, Chicago Tribune, and The Wall Street Journal. In 2008, Gene’s book, Farm Sanctuary: Changing Hearts and Minds About Animals and Food, became a national bestseller.
Gene, who began his activist career selling veggie hotdogs out of a VW van at Grateful Dead concerts to fund farm animal rescues, is currently Farm Sanctuary’s president. With shelters in New York and California, Farm Sanctuary provides rescue, refuge, and adoption for hundreds of farm animals each year, enabling visitors to connect with farm animals as emotional, intelligent individuals. Gene believes these animals stand as ambassadors for the billions on factory farms who have no voice, and he has dedicated his career to advocating on their behalf. Gene holds a bachelor’s degree in sociology from California State University, Northridge, and a master’s degree in agricultural economics from Cornell University.

Peter Johnston: Bringing the Food as Medicine Message Down Under

Meet my friend, Peter Johnston, who is helping create a wave of change in New Zealand. I met Peter and his colleagues at the Plantrician Project a few years ago and have wanted to interview him about his work on the other side of the world and we finally made it happen! Peter is a thoughtful and passionate human being that I hope will inspire you to make a difference in your world! (Please forgive the occasional poor connection but I made sure to ask the question again. Next time we will need to do this in person!)
Originally from Dunedin, New Zealand, Peter became exclusively plant-based in 1991 after reading John Robbins’ book Diet for a New America whilst employed in Montreal, Canada as a post-doctoral research fellow.
He has developed and runs a workplace-based program known as The Wholefood Solution where staff receive intensive support to go whole food plant-based for three weeks – a first for Australia! Peter is an accredited practicing dietitian with a Masters degree in Nutrition and Dietetics, has a PhD in human genetics, an honours degree in Zoology and a BA in psychology.
Peter is driven to achieve optimum health, both in himself and in others. He is a dedicated yoga practitioner, cycles 200km on most weeks, skis very fast, and competes in speed windsurfing, with a personal best of 42 knots (77km/hr).
Peter spent a decade as a left wing political activist campaigning in three countries and five cities.
He runs a nutrition private practice: Perfect Human Food Consulting, offering individual consultations, workplace training, residential reboot programs, university lecturing and public speaking. Peter has spent the last 15 years working in health promotion/community development. Peter has a voracious interest in the latest research and developments in plant-based nutrition.

Jeff Tkach captivated me when I heard him speak about the direct impact our soil diversity has on human health. Then when he said we only have enough topsoil for 60 more growing seasons I knew we had to talk. Louie Psihoyos: Director of Game Changers, Saving Lives One Film at a Time

He is a master of the art of storytelling and will inspire you to take action. His ideas and thinking outside the box started in the very beginning when he was hired by National Geographic at the age of 23 as a photographer.

Mindset of Labeling: Does It Help or Hurt Us?

Labels can be as simple or complex. What does it mean to be a diabetic? Does it just mean you have a disease or do you now identify yourself with the disease label? This could have a profound effect on how receptive we are to the possibilities of changing that label. As humans we are comfortable with the known even if it is unhealthy for us.

Gregg Segal: Food, Photos & Kids. What Do They Tell Us?

How many of us think about the food that our children are eating on a daily basis or much less how that accumulates over a week? Would you be surprised how much junk food your child is consuming? Would you do anything about it? These are the exact questions that Gregg Segal's book, Daily Bread, stirs in the consciousness of any adult who looks at these amazing photos. I was so moved by the photos that I bought the book and then of course I had to speak to Mr. Segal about this fascinating project of chronicling what children around the world ate for one week.
Here is the description on Mr. Segal's website, "In an 8 x 8 aluminum hut on a construction site outside Mumbai, Anchal Sahni sits down to dinner with her family: homemade aloo bhindo (okra and potatoes simmered in curry) and chapati (flatbread) with a side of lentils. Anchal has a healthier diet than many middle-class kids in India, who can afford to eat out. In Mumbai, a medium Dominoes pizza runs 13 bucks – about 3 times what Anchal’s father earns a day.
Sensing a sea change in Western attitudes about diet and the effects of junk food, fast food companies have begun investing heavily in foreign markets where public awareness isn’t as keen – and Big Macs aren’t junk – they’re a status symbol.
In 2015, Cambridge University conducted an exhaustive study, identifying countries with the healthiest diets in the world. 9 of the top 10 countries are in Africa, where vegetables, fruit, nuts, legumes, grains are staples and meals are homemade, a stark contrast to the US where nearly 60% of the calories we consume come from ultraprocessed foods and only 1% come from vegetables.
As globalization alters our relationship to food, I’m making my way around the world, asking kids to keep a journal of everything they eat in a week. Once the week is up, I make a portrait of the child with the food arranged around them. I’m focusing on kids because eating habits, which form when we’re young, last a lifetime and often pave the way to chronic health problems like diabetes, heart disease and colon cancer.
Despite growing awareness here in the US about the harm of eating processed foods, awareness hasn’t yet led to widespread change. Obesity rates are still soaring. 40 years ago, 1 out of 40 kids were obese. Today, 10 in 40 are. Since corn syrup came along, the incidence of diabetes has tripled. For the first time in many generations, life expectancy in America is declining and the main culprit is empty calories.
I’ve been encouraged to find regions and communities where slow food will never be displaced by junk food, where home cooked meals are the bedrock of family and culture, where love and pride are sensed in the aromas of broths, stews and curries. When the hand that stirs the pot is mom or dad, grandma or grandma, kids are healthier. The deeper goal of Daily Bread is to be a catalyst for change and link to a growing, grassroots community that is moving the needle on diet."

Segal approaches his work with the sensibility of a sociologist – using the medium to explore culture – our identity, memory, behavior, roles, beliefs, and values. Summer Rayne Oakes: How to Make a Plant Love You

Five million 18-34 year olds took up gardening in 2016, and 37% of all millennials own plants. The houseplant trend is poised to explode on an international scale, becoming less of a trend and more of a global movement. According to the New York Times, the original "plantfluencer" behind the sudden outburst of enthusiasm might be Summer Rayne Oakes.
Summer Rayne is an environmental scientist, entrepreneur, model and author of the new book "How to Make a Plant Love You: Cultivate Green Space in Your Home and Heart."
Summer Rayne keeps over 1000 live houseplants in her tiny Brooklyn apartment. She even installed a sub-irrigation system and helpful watering hacks, such as a 150-foot expandable hose that connects to pipes under her kitchen sink, so she only has to spend 30 minutes a day tending to her plants-an activity that she describes as a "moving meditation."
Do not be mistaken in thinking this book is only about how to grow houseplants, it much more about mindfulness, psychological benefits of being in the presence and caring for plants. I was blown away by the testimonials in her book about individuals with anxiety and depression feeling alive again by caring for their plants.
Summer Rayne is such a beautiful soul inside and out and I absolutely had a delightful and insightful conversation. I am certain we could have talked for hours and she inspired me to buy my own plants again as I have not owned any for many years.

Disillusioned with the unsustainable, reactionary, “sick-care” nature of conventional medicine, Dr. Casey Means (MD) LEFT her ENT surgical residency in her 5th and final year in order to devote her life and practice to Functional Medicine, and to help lead the movement towards a more sustainable model of healthcare. On this episode, she shares about why she walked away from surgery, what it really means to “fix” a disease and our skewed perspective of what is considered “heroic” in conventional medicine, and why a “food is medicine” approach is the future of healthcare. Through Functional Medicine, she draws on her background in genetics, systems and network biology, and a passion for nutrition to help patients understand the root-causes underlying disease. She aims to shift the paradigm to practicing medicine in a way that restores biologic functioning and empowers patients to “heal from within” through evidence based approaches in diet and lifestyle, rather than just symptom management. Dr. Jud Brewer (MD PhD) is one of my favorite people to interview because I learn so much with every conversation. Dr. Brewer is a cofounder of MindSciences, and his work is focused on the field of habit change and the “science of self-mastery”, combining over 20 years of experience with mindfulness training and a career in scientific research. He is passionate about understanding how our brains work, and how to use that knowledge to help people make deep, permanent change in their lives — with the goal of reducing suffering in the world at large.
Dr. Jud is the Director of Research and Innovation at the Mindfulness Center and associate professor in psychiatry at the School of Medicine at Brown University, as well as a research affiliate at MIT. Before that, he held research and teaching positions at Yale University and the University of Massachusetts’ Center for Mindfulness.

Many of you may have heard or seen the documentaries, Earthlings and Unity, but you may not know much about the man behind them, Shaun Monson. Shaun is a California native who wanted to be a filmmaker and in 1999 founded the company Nation Earth. (http://www.nationearth.com) The title of the company signifies the intention of his content — projects that bring the world together. He has finished two documentaries of a trilogy.
EARTHLINGS is a film for Animals, released in 2005. The definitive animal rights film narrated by three-time Academy Award Nominee Joaquin Phoenix and featuring music by Moby.
UNITY, a film for Humankind, released in 2015. The sequel to EARTHLINGS featuring a cast of 100 celebrity narrators. It is a film on the subject of duality, (i.e., why humans can’t get along with each other, the animals, or their environment).
Then the final documentary will be BEINGS, a film for Nature, to be released in 2020.

Dr. Ruth Heidrich: Conquering Stage 4 Breast Cancer and Becoming an Ironman Champion

Ruth Heidrich, PhD is a young 83 year-old athlete who was diagnosed with stage 4 breast cancer at the age of 47. Ruth had been a runner well over a decade, ate what she thought was a healthy diet when the devastating diagnosis came. Ruth shares how with Dr. John McDougall’s help, she refused chemotherapy, radiation, and medical intervention and instead turned to food as her medicine. She completely went to a whole food plant based diet over night.
The results of the dietary change were so powerful that, not only did she eradicate the cancer, she decided to add biking and swimming to her running to become a triathlete. Exactly two years later, she crossed the finish line of the Kona Ironman Triathlon, becoming the first vegan to do the Ironman. Ruth went on to do the Ironman 5 more times and is the winner of more than 900 trophies, 8 Gold Medals in the U.S.Senior Olympics, and 67 marathons including Boston, New York, & Moscow. She has also been named One of the Ten Fittest Women in North America.

Many of you may already know the beautiful and intelligent, Julieanna Hever but in case you don't she is known as The Plant-Based Dietitian. Julieanna has a bachelors of arts degree in Theatre from UCLA in and a masters of science degree in Nutrition from Cal State Northridge, bridging her three biggest passions for food, performing, and helping people.

Mark Huberman: Plant Based Since Birth

When I interview individuals and their transition to a whole foods plant based diet we here amazing health transformations, reversal of disease and a new lease on life. Now imagine having that lease on life since birth. Meet Mark Huberman who has adhered to a plant-based diet for all of his 67 years and credits his excellent health to the diet upon which he was raised.
He is currently the President of the National Health Association (NHA) which is a non-profit organization that has promoted the benefits of a plant-based diet for decades. The Association provides educational materials, educational events, and services to thousands of people around the world.
He literally grew up with the National Health Association having attended his first "Convention" with his parents Max and Ruth Huberman in 1964 at the age of 13. He began his service to the NHA (then called the ANHS) as a national board member at age 18 and has served the Association for the past 51 years on just about every level.

When you think about the FDA you would hope that a government agency would have only the best interests of the general public in mind. As we all know this is not the truth. Fortunately there are courageous individuals who bring to the public's attention the serious health risks of our food system that the FDA has brushed under the carpet. Meet Dr. Renee Dufault, FDA whistle blower and author of Unsafe at Any Meal. It was such an honor to discuss Dr. Dufault's story and the great personal sacrifice that she has made to bring this message to the public. A story of pure grit and tenacity and a bit of detective work to discover missing mercury and how it ended up in our foods. Dr. Dufault is a person caused to serve having been in the active duty military and then the U.S. Public Health Service. Dr. Dufault is recognized as a biomedical expert in the areas of inorganic mercury and fructose toxicology, nutrition, autism, ADHD, epigenetics, and environmental hazard assessment. Her articles published in peer reviewed medical journals continue to be widely accessed and cited by other scientists. She is widely known for blowing the whistle on the United States Food and Drug Administration (FDA) when the agency attempted to block publication of her findings of inorganic mercury in high fructose corn syrup. To publish these findings, she retired early and gave up her career as a United States Public Health Service Officer. Mother Jonespublished an award winning article about Dr. Dufault's investigation and it can be accessed at the following link:
Dr. Dufault has thus far developed web-based nutrition education interventions for three different clinical trials. Two were designed to help Native American college students improve their dietary pattern and reduce their risk of Type-2 diabetes. Diet surveys were conducted before and after each intervention to determine the effectiveness of the coaching instruction and curriculum. During one of these trials, blood samples were taken before and after the nutrition coursework to measure changes in glucose and inorganic mercury levels. In both trials, students significantly increased their consumption of whole healthy foods and significantly decreased their consumption of processed foods. Students also lost weight and reduced their BMI. In the blood study, students who participated in the web based nutrition intervention significantly reduced their glucose levels and had lower inorganic mercury levels at the end of the study compared to students that did not participate in the web based nutrition intervention.
In another clinical trial, Dr. Dufault developed web based nutrition curriculum for parents of children with autism and ADHD. Diet survey data was collected before and after the intervention. Parents who particpated in the web based nutrition curriculum significantly increased their intake of whole, healthy foods and significantly decreased their intake of processed foods. Parents reported the family dietary changes improved their child's overall behavior.

Dr. John McDougall is a passionate physician, teacher, and rebel of the medical status quo. Did you know he suffered a massive stroke at the tender age of 18 which left him paralyzed on the left side of his body for 2 weeks and remains noticeably weakened even now? This experience led him into medicine and has practiced medicine as a board certified internal medicine physician for over 40 years.

Meet Leonard Perlmutter, founder of the American Meditation Institute, and author of The Heart and Science of Yoga. This conversation was absolutely fascinating and we speak about many things including ideologies, what happens when we die, finding your inner wisdom to guide your actions and creating balance in your life among other things. Leonard is one of those people you just feel a little wiser after being in his presence.
We were introduced by a common physician friend, when she shared with me the amazing work he is doing with physicians and burnout. Did you know the suicide rate among male physicians is 1.41 times higher than the general male population. And among female physicians, the relative risk is even more pronounced — 2.27 times greater than the general female population? So when I heard someone is working with physicians to bring balance and peace to my colleagues and also help them translate it to their patients I was intrigued to say the least.

Meet Bill Sycalik founder of http://www.runningtheparks.com, and the National Parks Marathon Project! Bill's goal to run a marathon in all 59 U.S. National Parks is almost complete. He only needs 8 more that are in Alaska. He did the first 51in just 15 months, out the back of his Subaru, and eating plants.
Bill describes himself as a recovering management consultant from New York City who now lives in Colorado. When Bill read about the 100th anniversary of the National Parks Service he became inspired to start this massive project. He left his job and never looked back.
I have interviewed Bill previously when he was about half way through the parks but now we talk about all the amazing and cools things that you see and experience running across America's National Park treasures.

Meet the beautiful and inspirational Dr. Saray Stancic. In 1995, as a third year medical resident, literally over night, Dr. Stancic was diagnosed with multiple sclerosis. This unforeseen health challenge changed the course of her life, both professionally and personally. Her world had been turned upside down, in less than 24 hours.
The years that followed this life-altering diagnosis were riddled with pain, suffering and plenty of fear. At her worst, she had grown dependent on a dozen drugs, a cane, and had developed an overwhelming, sinking sense of hopelessness.
In her own words, Dr. Stancic shares her "Aha" moment that altered the course of her life, brought her healing and the fortitude to create her own documentary called Code Blue. The documentary seeks to shed light on the regrettable, shameful and absurd fact that physicians are ill-prepared by their medical schools to understand the all important aspect of optimal nutrition and how this affects human health.

Well, I didn't either until I read an article that Dr.Ramanan Laxminarayan had coauthored. What I read has led me to rethink about the world's drug resistant problems on a much broader scale, including how antibiotics are used in animal agriculture to promote growth. (one more reason to eat plants!) This discussion will challenge how you think about antibiotics and hopefully think twice before insisting on antibiotics at your next doctor's visit when he/she says it is a virus...
Dr. Laxminarayan directs the Center for Disease Dynamics, Economics & Policy. He is also a Senior Research Scholar and Lecturer at Princeton University. His research deals with the integration of epidemiological models of infectious diseases and drug resistance into the economic analysis of public health problems. He has worked to improve understanding of drug resistance as a problem of managing a shared global resource.
Laxminarayan has worked with the World Health Organization (WHO) and the World Bank on evaluating malaria treatment policy, vaccination strategies, the economic burden of tuberculosis, and control of non-communicable diseases. He has served on a number of advisory committees at WHO, Centers for Disease Control and Prevention, and the Institute of Medicine.

Dr. Richard Carmona was the 17th Surgeon General of the United States (2002-2006), the only Surgeon General unanimously confirmed by the United States Senate. He is currently the Chief of Health Innovations at Canyon Ranch and a distinguished professor at the University of Arizona.
Born to a poor Hispanic family in New York City, Dr. Carmona experienced homelessness, hunger, and health disparities during his youth. After dropping out of high school, Dr. Carmona enlisted in the U.S. Army in 1967. While serving, he earned his GED and went on to become a combat-decorated Special Forces Vietnam veteran. After leaving active duty, he attended Bronx Community College of the City University of New York through an open enrollment program for veterans. He received an associate of arts degree. He then attended the University of California, San Francisco, where he received a bachelor of science degree and medical degree. At the University of California Medical School, Dr. Carmona was awarded the prestigious gold-headed cane as the top graduate.
Trained in general and vascular surgery, Dr. Carmona also completed a NIH-sponsored fellowship in trauma, burns, and critical care. Dr. Carmona was then recruited jointly by the Tucson Medical Center and the University of Arizona to start and direct Arizona’s first regional trauma care system.
Dr. Carmona has also served for over 32 years with the Pima County Sheriff’s Department in Tucson, including as deputy sheriff, detective, SWAT team leader and department surgeon. He is one of the most highly decorated police officers in Arizona, and has won numerous awards.
Needless, to say Dr. Carmona is brilliant and has lived a life full of incredible accomplishments, but putting all of that aside I can say Dr. Carmona is a humble and kind soul. It was beyond an honor and privilege to interview an American Hero. Dr. Carmona shares his thoughts on what we need and can do to improve the health of not only Americans but all of us as global citizens. Amy watched Forks Over Knives on May 26, 2012, at the request of her son. At the time, she was a Type 2 diabetic, weighed 220 pounds (at 5'2" tall), and she was taking orals medications three times a day. She and her husband switched their diet literally over night. Amy was off her medications in 3 months...but I will let her tell you the rest of the story because it is incredible.

Marc is a former collegiate athlete that had the freedom to eat what every he wanted when he was younger. Sadly, Marc has witnessed his mother and sibling die from the ravages of type 2 diabetes. He has seen other siblings lose limbs and their sight from what he thought was a genetic disease. As the years progressed Marc soon found himself diagnosed with type 2 diabetes requiring oral medications and insulin. He was terrified of his future until he watched Forks Over Knives and the light bulb moment happened. Meet Dr. Steven Lawenda, family medicine physician and now a teacher to many how food is your medicine. Dr. Lawenda has an inspiring story of his own healing and how his own journey of finding health created a passion to help others. The crazy thing is that Dr. Lawenda found this by happen stance...his wife and an audio book had something to do with it.

Dr. Harold Koenig: Faith and Health

Faith, spirituality, theology and their affect on health has long been a fascination of mine so when I found Dr. Harold Koenig I knew I needed to interview him.
Dr. Koenig completed his undergraduate education at Stanford University, nursing school at San Joaquin Delta College, medical school training at the University of California at San Francisco, and geriatric medicine, psychiatry, and biostatistics training at Duke University Medical Center. He is currently board certified in general psychiatry, and formerly boarded in family medicine, geriatric medicine, and geriatric psychiatry, and is on the faculty at Duke as Professor of Psychiatry and Behavioral Sciences, and Associate Professor of Medicine.
Dr. Koenig is Director of the Center for Spirituality, Theology and Health at Duke University Medical Center, and has published extensively in the fields of mental health, geriatrics, and religion, with over 500 scientific peer-reviewed publications and book chapters and nearly 50 books in print or preparation. His research on religion, health and ethical issues in medicine has been featured on dozens of national and international TV news programs (including ABC’s World News Tonight, Dr. Oz Show, and several times on The Today Show, Good Morning America, and NBC Nightly News), over a hundred national or international radio programs, and hundreds of newspapers and magazines (including Reader's Digest, Parade Magazine, Newsweek, Time, and Guidepost).
Dr. Koenig has given testimony before the U.S. Senate (1998) and U.S. House of Representatives (2008) concerning the benefits of religion and spirituality on public health, and travels widely to give seminars and workshops on this topic.
His latest book, You are My Beloved. Really?, examines the evidence for God's love from Christian, Jewish, Muslim, Buddhist and Hindu perspectives based largely on the sacred scriptures from these traditions.

Meet Dr. Wayne Dysinger who was born and raised in Loma Linda and Yucaipa. He completed medical school at Loma Linda University, followed by a Family Medicine Residency at Florida Hospital, and a Preventive Medicine Residency back at Loma Linda. He has worked in Guam, Atlanta and New Hampshire prior to returning to Loma Linda University as Chair of the Preventive Medicine Department in 2003. Dr. Dysinger has an international reputation as a leader in the field of Lifestyle Medicine, having served as President of the American College of Lifestyle Medicine, and as an international consultant in the area. He is also the Medical Director of the Lifestyle Medicine Institute, and a Professor at Loma Linda University. Sarah Goodenough: Nothing Tastes as Good as Health Feels

Meet Sarah Goodenough a nurse, and mother of two boys, from Rochester, NY. About 4 years ago, she was overweight and sick with borderline high blood pressure, the beginning stages of fatty liver disease, among other things. She struggled for years trying to lose weight and exhausted just about every weight loss option that she could find. She would manage to lose some weight but continued to feel ill. She then read The China Study, that changed her life forever. Within weeks of transitioning so a whole foods plant based diet she began to drop weight and reversed her fatty liver disease along with everything else that ailed her. She has lost a total of 158 pounds since then and appeared in People magazine. She went on to create Kitchen Verde, a whole foods plant based diet home delivery program. So it is easy to see that beyond being beautiful she is a caring soul who wants to spread health to her patients and community. Why would a medical student quit medical school, go to culinary school and then back to medical school? Well that is the story of Dr. Rani Polak. Dr. Polak has an impressive resume and was a delight to talk to how he prescribes food as medicine and practices in the USA and Israel.
Rani Polak, MD, Chef, MBA is founder and director of the Culinary Healthcare Education Fundamentals (CHEF) Coaching program at the Institute of Lifestyle Medicine, Spaulding Rehabilitation Hospital, and a Research Associate, PM&R Department, Harvard Medical School. Prior to this position he completed a Research Fellowship in Lifestyle Medicine at Joslin Diabetes Center, Harvard Medical School, and a residency in Family Medicine at the Hebrew University Medical School, Jerusalem, Israel. Dr. Polak had the good fortune to be the founder of the Hadassah Healthy Cooking and Lifestyle Center, and the Israeli Society of Lifestyle Medicine. His first lifestyle intervention won the Hebrew University’s Kaye Award Price for innovation, and his book, Delicious Diabetic Recipes is a gold best seller.
Dr. Polak’s current focus is in nutrition education, and clinical and translational research relating to culinary medicine and medical education. His work focuses on CHEF Coaching utilizing evidence-based medicine to help individuals and professionals efficiently and cost-effectively improve nutrition. Aspects of this work includes a Patient CHEF Coaching program to improve the eating behavior of patients with cardio-metabolic risk factors, and a Clinician CHEF Coaching program that trains clinicians on how to provide effective culinary healthcare education. Meet Dr. Neal Barnard an adjunct associate professor of medicine at the George Washington University School of Medicine and Health Sciences in Washington, D.C., president of the Physicians Committee for Responsible Medicine, and founder of Barnard Medical Center.
Dr. Barnard is a fellow of the American College of Cardiology, the 2016 recipient of the American College of Lifestyle Medicine’s Trailblazer Award, and has led numerous research studies investigating the effects of diet on diabetes, body weight, and chronic pain, including a groundbreaking study of dietary interventions in type 2 diabetes, funded by the National Institutes of Health. Dr. Barnard has authored more than 70 scientific publications as well as 18 books, including the New York Times best-sellers Power Foods for the Brain, 21-Day Weight Loss Kickstart, and the USA Today best-seller Dr. Barnard’s Program for Reversing Diabetes.
As president of the Physicians Committee, Dr. Barnard leads programs advocating for preventive medicine, good nutrition, and higher ethical standards in research. He hosts four PBS television programs on nutrition and health and is frequently called on by news programs to discuss issues related to nutrition and research.

Meet Ellen Jaffe Jones who is an inspiring motivational speaker, personal trainer, running coach, author, and instructor of healthy cooking classes.
As a former investigative reporter and anchor for 18 years in major market TV news, Ellen won 2 Emmys and the National Press Club award. She became known as the “Earth Mother in a Suit” when she left TV and became a successful Wall Street financial consultant for 5 years. She wrote her first book, Eat Vegan on $4 a Day, after seeing too many news stories saying eating healthfully was impossible on a budget.
Ellen, an accomplished endurance and sprint runner, has won 104 5K+ Age Group awards since 2006. Cyrus Kambatta, PhD and Robby Barbaro: Mastering Diabetes

Cyrus Khambatta was diagnosed with type 1 diabetes in 2002. He received his undergraduate degree in Mechanical Engineering from Stanford University in 2003, and then he earned a PhD in Nutritional Biochemistry from the University of California at Berkeley in 2012.
For the past decade, he has been educating people with type 1 diabetes, type 1.5 diabetes, prediabetes and type 2 diabetes how to reduce and reverse insulin resistance through diet and exercise, following a research-based protocol that has helped hundreds of people around the world achieve exceptional diabetes control.
Robby Barbaro is the cofounder of Mastering Diabetes and the founder of Mindful Diabetic. He was diagnosed with type 1 diabetes at the age of 12, and embraced a low-fat, plant-based, whole-food diet 4 years after his diagnosis. To this day, Robby says that adopting this lifestyle has been one of the best decisions of his life, and since that fateful day his hemoglobin A1c value has never exceeded 6.4%. Originally from Toronto, she did her training in neurobiology and Clinical Psychology. Her interests in nutrition and mental illness grew out of her own research showing poor outcomes for children with significant psychiatric illness despite receiving conventional treatments for their conditions. For the last several years, she has been investigating the role of micronutrients in the expression of mental illness, specifically ADHD, Bipolar Disorder, anxiety and more recently, stress and PTSD associated with the Canterbury earthquakes." 2 cups cooked lentils
1 can black beans
2 teaspoon cumin
1 teaspoon chili powder
1 cup salsa
1 small onion
1 red pepper
Veggie broth as needed to sauté
I garlic chopped
Cook lentils as directed and set aside. Sauté onion in veggie broth add garlic, cumin, chili powder sauté for 2 minutes. Reduce heat and add lentils and beans stir and than add salsa and for veggie broth as needed and heat for 5 minutes.
Spoon over chips and add cheese sauce lettuce, tomatoes, cilantro and guacamole or scoop into romaine lettuce leafs!
1 carrot cut in small pieces
2 yellow potatoes
1/2 cup cashews
1 tsp onion powder
1 tsp garlic powder
1 tbsp Dijon mustard
1/4 cup nutritional yeast
Squeeze of lemon
1-2 tsp hot sauce to taste
Cut potato in small cubes and boil for 2 minutes. Add carrot and boil 5 minutes, add onion boil 7 minutes until veggies are tender. Blend cashews with veggies and 1 1/2 cups of hot water and all the spices, blend until smooth. Adjust hot sauce and salt to taste.
