Matthew Wichrowski: The Healing Power fo Plants and Nature

Nature has a way of healing the soul, providing clarity and bringing peace to a troubled mind. Did you know there is a clinical specialty that uses plants and nature to heal? It is called horticultural therapy and it is absolutely incredible. In this interview I interview an expert in the field, Matthew J. Wichrowski, MSW HTR, Clinical Assistant Professor in the Department of Rehabilitation Medicine and Senior Horticultural Therapist at Rusk Rehabilitation at NYU Langone Health. He is also Editor-in-Chief of the American Horticultural Therapy Association’s Journal of Therapeutic Horticulture. I first learned about horticultural therapy and Matthew when I read the book, How to Make a Plant Love You, by Summer Rayne Oakes. Gene Baur: The Conscience of the Food Movement

Gene Baur has been hailed as “the conscience of the food movement” by Time magazine. For more than 25 years he has traveled extensively around the country, campaigning to raise awareness about the abuses of industrialized factory farming and our current food system. A pioneer in the field of undercover investigations, Gene has visited hundreds of farms, stockyards, and slaughterhouses documenting their deplorable conditions. His pictures and videos exposing factory farming cruelties have aired nationally and internationally, educating millions about the plight of modern farm animals. Gene has also testified in courts and before local, state, and federal legislative bodies, advocating for better conditions for farm animals. His most important achievements include winning the first-ever cruelty conviction at a U.S. stockyard and introducing the first U.S. laws to prohibit cruel farming confinement methods in Florida, Arizona, and California. His efforts have been covered by top news organizations, including The New York Times, Los Angeles Times, Chicago Tribune, and The Wall Street Journal. In 2008, Gene’s book, Farm Sanctuary: Changing Hearts and Minds About Animals and Food, became a national bestseller. Gene, who began his activist career selling veggie hotdogs out of a VW van at Grateful Dead concerts to fund farm animal rescues, is currently Farm Sanctuary’s president. Meet my friend, Peter Johnston, who is helping create a wave of change in New Zealand. I met Peter and his colleagues at the Plantrician Project a few years ago and have wanted to interview him about his work on the other side of the world and we finally made it happen! Peter is a thoughtful and passionate human being that I hope will inspire you to make a difference in your world! Originally from Dunedin, New Zealand, Peter became exclusively plant-based in 1991 after reading John Robbins’ book Diet for a New America whilst employed in Montreal, Canada as a post-doctoral research fellow. He has developed and runs a workplace-based program known as The Wholefood Solution where staff receive intensive support to go whole food plant-based for three weeks – a first for Australia! Peter is an accredited practicing dietitian with a Masters degree in Nutrition and Dietetics, has a PhD in human genetics, an honours degree in Zoology and a BA in psychology. Peter is driven to achieve optimum health, both in himself and in others. He is a dedicated yoga practitioner, cycles 200km on most weeks, skis very fast, and competes in speed windsurfing, with a personal best of 42 knots (77km/hr). Peter spent a decade as a left wing political activist campaigning in three countries and five cities. Jeff Tkach: Unlocking the Power of Regenerative Organic Agriculture

Jeff Tkach captivated me when I heard him speak about the direct impact our soil diversity has on human health. Gregg Segal: Food, Photos & Kids. What Do They Tell Us?

How many of us think about the food that our children are eating on a daily basis or much less how that accumulates over a week? Would you be surprised how much junk food your child is consuming? Would you do anything about it? These are the exact questions that Gregg Segal's book, Daily Bread, stirs in the consciousness of any adult who looks at these amazing photos. I was so moved by the photos that I bought the book and then of course I had to speak to Mr. Segal about this fascinating project of chronicling what children around the world ate for one week. Here is the description on Mr. Segal's website, "In an 8 x 8 aluminum hut on a construction site outside Mumbai, Anchal Sahni sits down to dinner with her family: homemade aloo bhindo (okra and potatoes simmered in curry) and chapati (flatbread) with a side of lentils. Anchal has a healthier diet than many middle-class kids in India, who can afford to eat out. In Mumbai, a medium Dominoes pizza runs 13 bucks – about 3 times what Anchal’s father earns a day. Sensing a sea change in Western attitudes about diet and the effects of junk food, fast food companies have begun investing heavily in foreign markets where public awareness isn’t as keen – and Big Macs aren’t junk – they’re a status symbol. In 2015, Cambridge University conducted an exhaustive study, identifying countries with the healthiest diets in the world. 9 of the top 10 countries are in Africa, where vegetables, fruit, nuts, legumes, grains are staples and meals are homemade, a stark contrast to the US where nearly 60% of the calories we consume come from ultraprocessed foods and only 1% come from vegetables. As globalization alters our relationship to food, I’m making my way around the world, asking kids to keep a journal of everything they eat in a week. Once the week is up, I make a portrait of the child with the food arranged around them. I’m focusing on kids because eating habits, which form when we’re young, last a lifetime and often pave the way to chronic health problems like diabetes, heart disease and colon cancer. Despite growing awareness here in the US about the harm of eating processed foods, awareness hasn’t yet led to widespread change. Obesity rates are still soaring. 40 years ago, 1 out of 40 kids were obese. Today, 10 in 40 are. Since corn syrup came along, the incidence of diabetes has tripled. For the first time in many generations, life expectancy in America is declining and the main culprit is empty calories. I’ve been encouraged to find regions and communities where slow food will never be displaced by junk food, where home cooked meals are the bedrock of family and culture, where love and pride are sensed in the aromas of broths, stews and curries. When the hand that stirs the pot is mom or dad, grandma or grandma, kids are healthier. The deeper goal of Daily Bread is to be a catalyst for change and link to a growing, grassroots community that is moving the needle on diet." Five million 18-34 year olds took up gardening in 2016, and 37% of all millennials own plants. The houseplant trend is poised to explode on an international scale, becoming less of a trend and more of a global movement. According to the New York Times, the original "plantfluencer" behind the sudden outburst of enthusiasm might be Summer Rayne Oakes. Summer Rayne is an environmental scientist, entrepreneur, model and author of the new book "How to Make a Plant Love You: Cultivate Green Space in Your Home and Heart." Summer Rayne keeps over 1000 live houseplants in her tiny Brooklyn apartment. She even installed a sub-irrigation system and helpful watering hacks, such as a 150-foot expandable hose that connects to pipes under her kitchen sink, so she only has to spend 30 minutes a day tending to her plants-an activity that she describes as a "moving meditation." Do not be mistaken in thinking this book is only about how to grow houseplants, it much more about mindfulness, psychological benefits of being in the presence and caring for plants. I was blown away by the testimonials in her book about individuals with anxiety and depression feeling alive again by caring for their plants. Disillusioned with the unsustainable, reactionary, “sick-care” nature of conventional medicine, Dr. Casey Means (MD) LEFT her ENT surgical residency in her 5th and final year in order to devote her life and practice to Functional Medicine, and to help lead the movement towards a more sustainable model of healthcare. Shaun Monson: Creator of Unity and Earthlings

Many of you may have heard or seen the documentaries, Earthlings and Unity, but you may not know much about the man behind them, Shaun Monson. Shaun is a California native who wanted to be a filmmaker and in 1999 founded the company Nation Earth. ( The title of the company signifies the intention of his content — projects that bring the world together. He has finished two documentaries of a trilogy. EARTHLINGS is a film for Animals, released in 2005. The definitive animal rights film narrated by three-time Academy Award Nominee Joaquin Phoenix and featuring music by Moby. UNITY, a film for Humankind, released in 2015. The sequel to EARTHLINGS featuring a cast of 100 celebrity narrators. It is a film on the subject of duality, (i.e., why humans can’t get along with each other, the animals, or their environment). Then the final documentary will be BEINGS, a film for Nature, to be released in 2020. This was an incredible conversation that was inspiring, thought provoking and enjoyable! Dr. Ruth Heidrich: Conquering Stage 4 Breast Cancer and Becoming an Ironman Champion

Ruth Heidrich, PhD is a young 83 year-old athlete who was diagnosed with stage 4 breast cancer at the age of 47. Ruth had been a runner well over a decade, ate what she thought was a healthy diet when the devastating diagnosis came. Ruth shares how with Dr. John McDougall’s help, she refused chemotherapy, radiation, and medical intervention and instead turned to food as her medicine. She completely went to a whole food plant based diet over night. The results of the dietary change were so powerful that, not only did she eradicate the cancer, she decided to add biking and swimming to her running to become a triathlete. Exactly two years later, she crossed the finish line of the Kona Ironman Triathlon, becoming the first vegan to do the Ironman. Ruth went on to do the Ironman 5 more times and is the winner of more than 900 trophies, 8 Gold Medals in the U.S.Senior Olympics, and 67 marathons including Boston, New York, & Moscow. She has also been named One of the Ten Fittest Women in North America. Mark Huberman: Plant Based Since Birth

When I interview individuals and their transition to a whole foods plant based diet we here amazing health transformations, reversal of disease and a new lease on life. Now imagine having that lease on life since birth. Meet Mark Huberman who has adhered to a plant-based diet for all of his 67 years and credits his excellent health to the diet upon which he was raised. He is currently the President of the National Health Association (NHA) which is a non-profit organization that has promoted the benefits of a plant-based diet for decades. The Association provides educational materials, educational events, and services to thousands of people around the world. He literally grew up with the National Health Association having attended his first "Convention" with his parents Max and Ruth Huberman in 1964 at the age of 13. He began his service to the NHA (then called the ANHS) as a national board member at age 18 and has served the Association for the past 51 years on just about every level. Dr. Renee Default: Unsafe at ANY Meal

When you think about the FDA you would hope that a government agency would have only the best interests of the general public in mind. As we all know this is not the truth. Fortunately there are courageous individuals who bring to the public's attention the serious health risks of our food system that the FDA has brushed under the carpet. Meet Dr. Renee Dufault, FDA whistle blower and author of Unsafe at Any Meal. It was such an honor to discuss Dr. Dufault's story and the great personal sacrifice that she has made to bring this message to the public. A story of pure grit and tenacity and a bit of detective work to discover missing mercury and how it ended up in our foods. Dr. Dufault is a person caused to serve having been in the active duty military and then the U.S. Public Health Service. Dr. Dufault is recognized as a biomedical expert in the areas of inorganic mercury and fructose toxicology, nutrition, autism, ADHD, epigenetics, and environmental hazard assessment. Her articles published in peer reviewed medical journals continue to be widely accessed and cited by other scientists. She is widely known for blowing the whistle on the United States Food and Drug Administration (FDA) when the agency attempted to block publication of her findings of inorganic mercury in high fructose corn syrup. To publish these findings, she retired early and gave up her career as a United States Public Health Service Officer. Mother Jonespublished an award winning article about Dr. Dufault's investigation and it can be accessed at the following link: Dr. Dufault has thus far developed web-based nutrition education interventions for three different clinical trials. Two were designed to help Native American college students improve their dietary pattern and reduce their risk of Type-2 diabetes. Diet surveys were conducted before and after each intervention to determine the effectiveness of the coaching instruction and curriculum. During one of these trials, blood samples were taken before and after the nutrition coursework to measure changes in glucose and inorganic mercury levels. In both trials, students significantly increased their consumption of whole healthy foods and significantly decreased their consumption of processed foods. Students also lost weight and reduced their BMI. In the blood study, students who participated in the web based nutrition intervention significantly reduced their glucose levels and had lower inorganic mercury levels at the end of the study compared to students that did not participate in the web based nutrition intervention. In another clinical trial, Dr. Dufault developed web based nutrition curriculum for parents of children with autism and ADHD. Diet survey data was collected before and after the intervention. Parents who particpated in the web based nutrition curriculum significantly increased their intake of whole, healthy foods and significantly decreased their intake of processed foods. Well, I didn't either until I read an article that Dr.Ramanan Laxminarayan had coauthored. What I read has led me to rethink about the world's drug resistant problems on a much broader scale, including how antibiotics are used in animal agriculture to promote growth. (one more reason to eat plants!) This discussion will challenge how you think about antibiotics and hopefully think twice before insisting on antibiotics at your next doctor's visit when he/she says it is a virus... Dr. Laxminarayan directs the Center for Disease Dynamics, Economics & Policy. He is also a Senior Research Scholar and Lecturer at Princeton University. His research deals with the integration of epidemiological models of infectious diseases and drug resistance into the economic analysis of public health problems. He has worked to improve understanding of drug resistance as a problem of managing a shared global resource. Laxminarayan has worked with the World Health Organization (WHO) and the World Bank on evaluating malaria treatment policy, vaccination strategies, the economic burden of tuberculosis, and control of non-communicable diseases. He has served on a number of advisory committees at WHO, Centers for Disease Control and Prevention, and the Institute of Medicine. Dr. Richard Carmona: Former Surgeon General Shares His Rx for a Healthier America

Dr. Richard Carmona was the 17th Surgeon General of the United States (2002-2006), the only Surgeon General unanimously confirmed by the United States Senate. He is currently the Chief of Health Innovations at Canyon Ranch and a distinguished professor at the University of Arizona. Born to a poor Hispanic family in New York City, Dr. Carmona experienced homelessness, hunger, and health disparities during his youth. After dropping out of high school, Dr. Carmona enlisted in the U.S. Army in 1967. While serving, he earned his GED and went on to become a combat-decorated Special Forces Vietnam veteran. After leaving active duty, he attended Bronx Community College of the City University of New York through an open enrollment program for veterans. He received an associate of arts degree. He then attended the University of California, San Francisco, where he received a bachelor of science degree and medical degree. At the University of California Medical School, Dr. Carmona was awarded the prestigious gold-headed cane as the top graduate. Trained in general and vascular surgery, Dr. Carmona also completed a NIH-sponsored fellowship in trauma, burns, and critical care. Dr. Carmona was then recruited jointly by the Tucson Medical Center and the University of Arizona to start and direct Arizona’s first regional trauma care system. Dr. Carmona has also served for over 32 years with the Pima County Sheriff’s Department in Tucson, including as deputy sheriff, detective, SWAT team leader and department surgeon. He is one of the most highly decorated police officers in Arizona, and has won numerous awards. Needless, to say Dr. Carmona is brilliant and has lived a life full of incredible accomplishments, but putting all of that aside I can say Dr. Carmona is a humble and kind soul. It was beyond an honor and privilege to interview an American Hero. Faith, spirituality, theology and their affect on health has long been a fascination of mine so when I found Dr. Harold Koenig I knew I needed to interview him. Dr. Koenig completed his undergraduate education at Stanford University, nursing school at San Joaquin Delta College, medical school training at the University of California at San Francisco, and geriatric medicine, psychiatry, and biostatistics training at Duke University Medical Center. He is currently board certified in general psychiatry, and formerly boarded in family medicine, geriatric medicine, and geriatric psychiatry, and is on the faculty at Duke as Professor of Psychiatry and Behavioral Sciences, and Associate Professor of Medicine. Dr. Koenig is Director of the Center for Spirituality, Theology and Health at Duke University Medical Center, and has published extensively in the fields of mental health, geriatrics, and religion, with over 500 scientific peer-reviewed publications and book chapters and nearly 50 books in print or preparation. His research on religion, health and ethical issues in medicine has been featured on dozens of national and international TV news programs (including ABC’s World News Tonight, Dr. Oz Show, and several times on The Today Show, Good Morning America, and NBC Nightly News), over a hundred national or international radio programs, and hundreds of newspapers and magazines (including Reader's Digest, Parade Magazine, Newsweek, Time, and Guidepost). Dr. Koenig has given testimony before the U.S. Senate (1998) and U.S. House of Representatives (2008) concerning the benefits of religion and spirituality on public health, and travels widely to give seminars and workshops on this topic. His latest book, You are My Beloved. Meet Sarah Goodenough a nurse, and mother of two boys, from Rochester, NY. About 4 years ago, she was overweight and sick with borderline high blood pressure, the beginning stages of fatty liver disease, among other things. She struggled for years trying to lose weight and exhausted just about every weight loss option that she could find. She would manage to lose some weight but continued to feel ill. She then read The China Study, that changed her life forever. Within weeks of transitioning so a whole foods plant based diet she began to drop weight and reversed her fatty liver disease along with everything else that ailed her. LENTIL NACHOS 2 cups cooked lentils 1 can black beans 2 teaspoon cumin 1 teaspoon chili powder 1 cup salsa 1 small onion 1 red pepper Veggie broth as needed to sauté I garlic chopped Corn tortillas RomainE lettuce Cook lentils as directed and set aside. Sauté onion in veggie broth add garlic, cumin, chili powder sauté for 2 minutes. Reduce heat and add lentils and beans stir and than add salsa and for veggie broth as needed and heat for 5 minutes. Spoon over chips and add cheese sauce lettuce, tomatoes, cilantro and guacamole or scoop into romaine lettuce leafs! CHEESE SAUCE 1 carrot cut in small pieces 2 yellow potatoes 1/4 onion 1/2 cup cashews 1tsp salt 1 tsp onion powder 1 tsp garlic powder 1 tbsp Dijon mustard 1/4 cup nutritional yeast Squeeze of lemon 1-2 tsp hot sauce to taste Cut potato in small cubes and boil for 2 minutes. Add carrot and boil 5 minutes, add onion boil 7 minutes until veggies are tender. Blend cashews with veggies and 1 1/2 cups of hot water and all the spices, blend until smooth. Adjust hot sauce and salt to taste. TOPPINGS Cheese sauce Tomatoes Guacamole Lettuce Cilantro
